Vegetable Frittata

A frittata is an egg-based Italian dish similar to an omelette or crustless quiche, but is cooked in a skillet or pan on top of the stove.  With a frittata, you can just about anything to it that you want.  From meat, to veggies, to whatever else you can think of or have a taste for.  Today's taste was an all veggie frittata.


First add 1 tablespoon of olive oil to a skillet.  Heat and coat the pan with the oil.  Add your vegetables and saute' until the vegetables become transparent.  Below are diced celery, green onion, carrot, peas and corn.  In a separate bowl beat 2 eggs until well mixed.  Pour over vegetables.  Add kosher sea salt and pepper, and cover skillet with lid.  Turn heat to very low and allow to slowly cook until the center is cooked.


When the center is cooked, remove skillet from heat and sprinkle with cheese or not.  The cheese is optional.  Cover for 2-3 minutes to allow steam to melt the cheese.  Using a turner or spatula, loosen edges and underneath.  Place frittata in dish of your choice and Enjoy!

Chia Pudding, Seeds, Nut, & Fruit


In a mason jar, add 2 cups of vanilla-flavored unsweetened almond milk, 1/4 cup chia seeds, 2 tablespoon agave nectar, 1 teaspoon pure vanilla extract.  Stir to mix well.  Cover and refrigerator overnight. Consistency will be gelatin like when ready.


Top with strawberry and peach slices (about 1/2 cup), 2 tbsp pumpkin seeds, 1 tbsp hemp seed, and 2 tbsp pecan pieces. Enjoy!

Baked Avocado & Egg


Here's a simple and quick breakfast idea that's packed with protein and other nutrients.  To make just simply need a whole avocado and 2 eggs.  Cut the avocado in half  length-wise and remove the seed. Take a spoon and scoop out some of the avocado to make enough space for the egg.  Crack each egg and place one in each half of the avocado.  Sprinkle with cracked pepper.  Place avocado on top of a muffin pan to hold in place.  Bake for 15-20 minutes at 350 degrees.  Add grated Parmesan cheese. (optional) 

A healthier option to this dish is to use one egg.  Whisk egg  in a bowl and pour into each half of the avocado.

Quinoa Breakfast Bowl

  


This dish is one of my favorite breakfast meals when I want something warm, sweet, and crunchy!  Quinoa is the only super grain that I know with about 10 grams of protein per cup.  That's more than from an avocado.  This breakfast bowl meets so many nutritional needs:

  • Walnuts - good source of Omega-3 that helps to lower triglycerides and blood pressure
  • Granny smith apple - a main source of flavonoids that's rich in vitamin C
  • Cinnamon which is good for lowing blood sugar - a benefit for type 1 and 2 diabetes. 

 
 
Quinoa Breakfast Bowl
1c Rainbow Quinoa
1/2 apple (diced)
1 medjool date (chopped)
2 tbsp chopped walnuts
1 dollop of apple sauce
Cinnamon sprinkled
 
Directions:
Rinse quinoa and add to 2 1/2 cups of boiling water.  Cook for about 15 minutes on high the cover and let sit for 15 minutes.  This allows the quinoa to absorb remaining water and become fluffy.
 
Place 1 cup of quinoa in a bowl, garnish with remaining ingredients and add cinnamon to taste.

Scrambled Eggs w/Spinach & Parmesan

Ingredients:
2 large eggs
3 cups baby spinach
1-2 tbsp grated parmesan
1 tsp olive oil

Preparation:
Heat oil in skillet. Add spinach and sauté until tender. Whisk eggs in a bowl and add seasoning. Pour egg over spinach and cook until eggs are almost done. Sprinkle cheese on top. I added onions & bell peppers.

Apples & Cinnamon Breakfast Quinoa

Found this delicious breakfast recipe that uses Quinoa!  Pronounced (keen-wah), Quinoa seeds contain essential amino acids like lysine and good quantities of calcium, phosphorus, and iron. It's also a high fiber food that keeps you full longer.  You're going to really love it after you make it.  Breakfast is the most important meal of the day, so eat up!

Apples & Cinnamon Breakfast Quinoa
 
Ingredients:
1/2 tsp sea salt
1 cup dry quinoa, rinsed well
1 1/2 cups water
1 tsp cinnamon + more for sprinkling
2 tsp vanilla extract
1/2 cup unsweetened applesauce
1/4 cup golden raisins
1 cup warmed fat-free milk for drizzling (non-dairy milk is fine)
1 gala apple, peeled and diced
1/4 cup walnuts, chopped

Preparation
Rinse the quinoa well before cooking to rinse off the saponins which has a slightly bitter flavor. 
Combine quinoa, water, salt, cinnamon and vanilla in a small saucepan and bring to a boil. Reduce to a simmer, cover, and let cook for 15 minutes until quinoa can be fluffed with a fork.
Divide cooked quinoa between four bowls then stir in apple sauce, raisins, and pour in warmed milk. Top with fresh cut apples and walnuts and a dash of cinnamon
 
Makes 4 servings. You can divide the recipe to make 2 servings
